Chocolate Mint Slice


150 g butter

• 1 cup brown sugar

1 egg

• 1 tsp vanilla extract

• ½ cup plain flour 1/2 cup

• 1/3 cup self raising flour

• ¼ cup Flavourista After Dinner Mint Choc Powder

• ½ cup desiccated coconut For the icing

• 2 cups icing sugar

• 30 g butter

• 2-3 tbsboiling water

• 1-2 tsp peppermint extract more or less depending on taste preference

• 1-2 drops green food colouring

• extra coconut for sprinkling


1. Preheat oven to 160 degrees. Grease and line with baking paper a 20x30cm lamington pan.

2. Place butter, sugar, egg, vanilla and peppermint extract in a bowl, stir until combined.

3. Sift plain flour, self-raising flour and cocoa into bowl. Add the coconut.Stir until mixture has combined.

4. Spread mixture evenly into pan.

5. Bake for 25-30 minutes or until just firm.

6. To make the icing, sift icing sugar into a bowl. Add butter, boiling water peppermint extract and food colouring, stir together.

7. Spreadwarm slice with icing.

8. Sprinkle remaining coconut over slice.
