Gumbo Flavourista Style

  • Variations

    Add chopped smoked chicken or ham with or instead of chorizo


2 Brown Onions (Diced)

1 red capsicum (Diced)

1 yellow capsicum (Diced)

3 sticks celery (Diced)

2 double chicken breasts (approx 800 gm) sliced

2 chorizo sausage

1 tbsp Thyme for Garlic

4 tbsp Roasted Garlic Smash

1 -2 tbsp Cajun Hotpot

4 cups of stock (chicken, beef or veg - your choice)

1 cup oil or Lard (I use 1/2 and 1/2 )

1 cup plain flour

1 cup chopped shallots cooked rice (optional) crusty bread(optional)


Place chorizo in a hot pan and cook over medium heat.

Add chicken pieces and 2 tbsp Roasted Garlic smash - cook until chicken is browned.

Remove and set aside.

Add oil/lard to large pan heat gently.

Add flour stirring continuously - this is the roux and one of the most important things to get right.

Keep stirring until a dark brown but do not burn it.

Add chopped vegetables.

Add the remaining 2 tbsp Roasted Garlic Smash and Thyme for Garlic. until vegetables are starting to soften.

Add chicken and chorizo.

Add stock and 1 tbsp Cajun Hotpot, let simmer 40 minutes.

Taste and add more Cajun Hotpot if desired (all depends on the level of heat you want).

Garnish with shallots and serve over rice or with crusty bread
