Zucchini & Corn Fritters

    Add grated carrot, spring onions or baby spinach


3/4 cup SR Flour

400 gm Corn Kernels

2 zucchinis, grated (excess moisture removed by wrapping in paper towel and squeezing)

2 eggs

20 gm melted butter

1/2 cup milk

3/4 cup grated Cheese (you can use cheddar, parmesan, mozzarella or a mix)

2 tsp. Flavourista Italiano Spice

1/2 tsp. Stockman's Whip Salt

1 Avocado

1 tsp. Souly Guacamole Spice

1/2 tsp. Zing! Olive Oil

1/2 cup lite sour cream


Place flour, milk, eggs & melted butter in bowl and mix well.

Add corn, Zucchini, Italiano Spice and Stockman's Whip Salt - mix well.

Stir in Cheese.

Warm fry pan to medium heat.

Brush pan with a light coating Flavourista Herb Garden or Roasted Garlic Smash.

Place spoonfuls of mixture into pan and cook 2-3 minutes, then flip and cook for a further 2-3 minutes.

Continue until all mix is used.

Combine Smashed Avocado, Sour Cream, Souly Guacamole and Zing Oil in a bowl and mix well.

Serve warm or cold. Great for lunchboxes as well.
